This week I took a visit to the Barry-Callebaut Chocolate Academy here in Chicago. Barry-Callebaut is one of the worlds largest chocolate producers. You have had their chocolate even if you don’t know it. I can tell you from personal experience, it is great chocolate. Richard Cusick oversees the education, promotion and general goodwill of the Barry-Callebaut Chocolate Academy. We talked about what he does there and how he got to do what he does.
