Chef Tom is teaching a course in laminated doughs this term and this is for his students. Everyone can learn about laminated doughs however. These are the doughs that are the flakiest and sometimes the most rich in the pastry shop. We are talking about Napoleon, fruit turnovers, bouchees, pithivier and many others. They are all very delicious. Chef Tom describes how to make them flaky and flavorful. In the coming weeks you will see podcasts on the rest of the laminated doughs like croissant, Danish pastry, phyllo and brioche.
