Wook Kang and I talk about garde manger. What’s garde manger, you ask? Well, it’s just one of the most interesting parts of a professional kitchen. It’s all the cold salads, sandwiches, terrines, pates and many other items. We also talk about what’s coming up for each of us. It’s an exciting time at CHIC and we want to share it with you. Check out Chicago Gourmet coming up next weekend at Millennium Park. CHIC will be represented there. I will be there on Sunday, September 28th. One more thing; I will be traveling to Ottawa, Canada for a conference with other pastry chefs from around the country and the chefs from Le Cordon Bleu North America. What a week this will be!
