I can’t think of anything besides corn on the cob that makes me think more of summer than ceviche. Ceviche is the combination of seafood, usually shrimp and scallops, with lime juice. The lime juice “cooks” the shellfish. What it does really is denature the protein. It is delicious! It is served with cilantro, onions, mango, avacodo, tomatoes and whatever else suits your taste.
