Microgreens from Nicolas Mazard of Koppert Cress

In addition to discovering new products each year at the Fancy Food Show, we get an opportunity to catch up with old friends and folks we’ve had on the podcast before. Nicolas Mazard is a fascinating character whom I’ve interviewed 2 years ago on ReMARKable Palate. He grows microgreens in his greenhouse, which are beautiful as garnishes, but which also pack amazing flavors and sensations.
