I’d love to see a course on all lower fat, lower carb, “healthy” eating. Less use of sugars, white flour, and high fat ingredients, i.e. cream. That would be a challenge for sure, but very beneficial.

This is great! I would love to see you address some approachable ethnic dishes that incorporate authentic but accessible ingredients. I would love a ‘chef’ glossary, language (in the nicest possible way) class! Often I read a recipe and have to do a search on some of the terminology used…thanks and good luck!
